Ingredients
- 2 eggs
- 1/2 avocado
- 2 tbsp cream cheese
- chives
- salt and pepper to taste
- 1 tbsp butter or olive oil
Instructions
- 1Prepare Everything Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Cut the avocado in half, remove the pit, scoop out the flesh, and slice it. Separate the 2 eggs, placing the whites in one bowl and keeping each yolk intact in separate small bowls.
- 2Whip the Egg Whites Add salt and black pepper to the egg whites. Using a hand mixer or whisk, beat the whites until they become thick and fluffy with stiff peaks. If using shredded cheese, gently fold it into the whipped egg whites without deflating them.
- 3Bake the Cloud Eggs Spoon the whipped egg whites onto the prepared baking sheet and shape them into 2 round clouds. Use the back of a spoon to create a small well in the center of each cloud. Bake for 3–4 minutes, then carefully place one egg yolk into each well. Return to the oven and bake for another 3–4 minutes, until the egg whites are lightly golden and the yolks are cooked to your preferred doneness.
- 4Assemble & Serve Remove the cloud eggs from the oven and let them cool for about 1 minute. Place the sliced avocado on a plate and gently transfer the cloud eggs alongside or on top of the avocado. Finish with chopped chives or green onion and an extra sprinkle of black pepper. Serve immediately while warm.
