Ingredients

  • 1 spaghetti squash
  • 500g ground beef
  • marinara
  • parmesan
  • salt and pepper to taste
  • 2 tbsp olive oil or butter
  • fresh herbs to finish

Instructions

  1. 1Prepare Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Brush the inside lightly with olive oil and season with salt and pepper.
  2. 2Roast the Squash Place the squash cut-side down on a baking sheet. Roast for 35–45 minutes, until the flesh is tender. Let it cool slightly, then scrape with a fork to create spaghetti-like strands.
  3. 3Make the Bolognese While the squash cooks, brown ground beef in a skillet over medium heat. Add tomato sauce, garlic, onion, salt, and pepper. Simmer for 10–15 minutes, stirring occasionally.
  4. 4Combine & Serve Divide the spaghetti squash between bowls and top with the Bolognese sauce. Add Parmesan or fresh herbs if desired and serve warm.
